The „Fried seafood with Giulietta sauce“ is the delicious proposal of the Restaurant Giulietta Twenties in Bergamo (BG) for November, perfect in combination to our sparkling wine Drusian Valdobbiadene DOCG Superiore di Cartizze.
It’s a mixed fried fish, accompanied by a lime sauce with the name of the restaurant. Let’s see together the steps and ingredients necessary for the realization of the dish:
For the Giulietta sauce (lime aioli sauce x 1 portion):
-50gr mayonnaise
-1/2g finely chopped fresh garlic
-1/2g grated lime zest
For the Fried seafood (x 4 portions):
-250g squid
-50g shrimps (shelled and gutted)
-1 prawn (per portion, engraved on the back and gutted)
-35g zucchini
-35g eggplant
-35g carrots
-Some flour 00 70%
-Some re-milled semolina flour 30%
-30g egg white
Procedure:
Cut the vegetables into thin stipes and prepare the fish as indicated above. Pass everything in the egg white, drain the excess and then pass in the two pre-pressed flours. Shake the excess flour in a sieve and fry in soybean oil at 185 ° for 3/4 minutes.
Serving:
Drain the fish and vegetables in absorbent paper, salt and serve hot and crispy with the sauce to accompany.
