It is the result of precise and accurate processing, which allows obtaining an elegant, never intrusive, perlage. Well, it takes time first of all.
According to the Prosecco Superiore production rules, the secondary fermentation could last just 30 days. In our company, we believe this time is not enough. To produce our sparkling wines, this process lasts from a minimum of 70-80 days up to a maximum of 120-150.
Thanks to a secondary fermentation that lasts so long and at a controlled temperature of 15-16 ° C, we can obtain a perlage of great finesse and elegance.
Production costs are certainly higher, but the final result is priceless and our final goal is always and unquestionably unique: to guarantee the quality of the product.
