We are proud to introduce SUI LIEVITI, a bottle fermented sparkling wine that embraces the local tradition. We produce it as our grandparents were used to, with the secondary fermentation in the bottle, without disgorgement. It comes in the Extra Brut version. It has a very distinctive aromatic profile, that is different from the Prosecco Superiore produced according to the Charmat method. It has the classic scent of bread crust provided by the yeasts that add complexity and flavor.
This sparkling wine comes from 100% Glera grapes, grown on the Valdobbiadene hills. We bottle the base wine in spring, after the harvest. The wine is stored on its lees at a controlled temperature of 15-18°C for the following three months. Every bottle is unique: it allows us to showcase the tradition of our land and families.
You can serve Drusian Sui Lieviti clear or opaque. In the first case, pour it into a carafe and leave the sediment in the bottle. If you want to add flavour, mix the yeasty residue with the wine. Serve at a temperature of 6-8°C (43/46°F).
This bright sparkler pairs well with aged cheese, salami or traditional dishes from the Venetian cuisine, such as “baccalà” (salted codfish) or “sarde in saôr” (sardines in a sweet and sour sauce). Great also with fish or vegetable tempura.
