Winter pruning “sul Bruno”, also called dry pruning, is the set of all the cuts made to the vines during the winter rest and depends on the chosen form of breeding.
This pruning happens between November and March and, in every location and year, postponing or anticipating this operation could also lead to better results.
Based on the fertility of the soil, our company carries out three types of pruning:
– Pruning “Guyot” if we are in the presence of lean soil. It preserves shoots of medium length and some buds between 10 and 20;
– Pruning “Sylvoz” if the soil is more fertile and provides for an erect stem of about 100-110 cm in height which then curves sharply at 90 ° bringing about 8-10 buds;
– Pruning with “Double upside down modified” when the soil is of medium fertility. In this case, 1-2 year old wood is left with about 18-20 buds per plant. The first bud of Glera grapes is not fertile. That is also the most used method on the territory of Valdobbiadene.
The number of buds that remain on each plant affects the quantity and quality of the grapes that will be produced, so you have to pay attention to the size of the plant, to create the right balance between the two parameters, useful for the correct production of grapes.
Leaving many buds, for example, leads to an abundant production of grapes but with low sugar and acidity content. Leaving few buds leads to lower production of grapes but with greater sugar content and acidity.
